Diego Robelo - Thermic 'Churro' Natural Costa Rican
Costa Rica, Turrialba, Aquiares - Thermic Fermentation, Natural
H1 - Centroamericano - 1200masl
We’re tasting fruit cake, floral notes & tropical fruits
This coffee joined the Local Knowledge Roster after Tom tried it somewhere else and went hunting for it so we could offer it on our menu. It’s a fantastic demonstration of high quality extended and experimental processing elevating the characteristics of an already wonderful coffee. The fruitiness matures as more boozy notes start to develop. We love this under milk and as espresso.
To avoid confusion, the name “churro” refers to the way the beans are wrapped up for thermic fermentation which looks (a bit) like a churro, not a tasting note.
